ZUCCHINI NUT BREAD 
1 1/4 c. wheat germ
3 1/4 c. flour
3 1/4 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
1 c. chopped nuts
1 3/4 c. sugar
2 eggs
2 tsp. vanilla
2/3 c. cooking oil
3 c. zucchini, grated

Mix together wheat germ, flour, baking powder, cinnamon, and nuts. Beat eggs until light in color and fluffy. Beat in sugar, vanilla, and oil; gradually stir in wheat germ mixture.

Turn into 2 greased and floured 8 1/2 x 4 1/2 x 2 1/2 loaf pans.; Bake at 350 degrees for 1 hour. Test for doneness. Cool 10 minutes on rack.
