ZUCCHINI NUT BREAD 
3 eggs
2 c. sugar
1 c. oil
3 tsp. vanilla
2 c. zucchini, grated
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1/2 c. chopped nuts

Beat eggs, oil, sugar, zucchini and vanilla. Add all dry ingredients. Mix well. Place into two greased loaf pans. Bake at 325 degrees for 1 hour.
