APRICOT - CITRUS SALAD 
2 pkgs. apricot Jello
1 (20 oz.) can crushed pineapple, undrained
1 c. Cool Whip
2 c. hot orange juice (or juice drained from fruits)
1 1/2 c. cottage cheese
2 tbsp. mayonnaise
2 tbsp. lemon juice
1 can (20 oz.) pineapple chunks, drained
1 can mandarin oranges, drained
2 bananas, sliced

Dissolve Jello in hot juice, stirring well. Add crushed pineapple. Let stand in refrigerator until slightly thickened (consistency of egg whites). Add cottage cheese and mayonnaise and mix. Then add 1 can pineapple chunks, drained and 1 (11 ounce) can mandarin oranges, drained. Also add 2 bananas, sliced. When all ingredients are combined, fold in Cool Whip and chill, covered at least 2 hours in refrigerator.
