SAUERBRATEN 
3 lbs. eye of round beef roast
1/8 tsp. garlic powder
1/4 tsp. black pepper
1/2 c. diced onion
2 bay leaves
1/4 c. sugar
2 c. vinegar
2 c. water

Mix together garlic, pepper, onion, bay leaves, sugar, vinegar and water. Heat this mixture, but do not boil. Place meat in a large bowl and pour hot mixture over meat. Cover bowl and let stand in refrigerator 4 days, turning daily. Drain, saving vinegar mixture. Brown meat, add vinegar mixture and bake meat 2 hours or until desired done. After meat is done, cool and slice. Thicken liquid to a gravy texture and pour over meat which has been placed in a shallow baking dish or serving dish.

This may be prepared in baking dish the day before and heated just before serving.
