SAUSAGE AND SPINACH SOUP 
1/2 lb. Italian sweet sausage, cut into 3/4 inch pieces
1 box chicken broth (4 c)
1 med onion, chopped
1/2 tsp. dried oregano leaves, crushed
1 med carrot sliced
2 c. coarsely chopped spinach or 1 c. frozen chopped spinach

Spray saucepot with cooking spray (like Pam); add sausage and cook until brown. Add broth, onion, carrot and oregano; heat to a boil. Cover and cook over low heat 10 minutes or until vegetables are tender. Stir in spinach and cook 1 minute longer.

Serves 5.
