HAWAIIAN SPARERIBS
4-6 lbs. lean spare ribs (pork)
1/4 c. flour
1 tsp. salt
1/4 c. soya sauce
4 tbsp. oil
3/4 c. brown sugar
2/3 c. wine vinegar (red regina)
1/2 c. water
1 (#2) can sliced pineapple
1 clove garlic or sprinkle powdered garlic
1 tsp. grated fresh ginger root or 1/2 teaspoon powdered ginger

Cut spareribs into 2-inch strips. Mix flour, salt, and soya sauce to a smooth paste. Brush on ribs. Allow to stand 10 minutes. Heat oil in large skillet and brown ribs on all sides. Transfer ribs to roasting pan. Pour fat from skillet, then add sugar, vinegar, water, pineapple juice, garlic, and ginger. Heat and stir, loosening brown juices to pour over ribs.

Place ribs in 350 degree oven and bake for 1 1/2 hours, turning ribs occasionally. Add pineapple slices during last 10 minutes of baking time.
