SHRIMP SCAMPI 
6 tbsp. butter
1 tbsp. olive oil
2 tsp. lemon juice
3/4 lb. med. shrimp, cleaned
1 tbsp. basil
1/4 tsp. lemon peel
1 tbsp. onion, minced
3 cloves garlic, minced
1/4 tsp. salt
2 tbsp. parsley
2 tsp. oregano
Dash of Tabasco sauce

Melt butter; stir in onion, oil, garlic, lemon juice, and salt. Cook until bubbly. Add shrimp and cook until they turn pink (about 5 minutes). Stir in remaining ingredients. Serve over rice or noodles. 2 servings.
