EASY SHRIMP SCAMPI 
1/2 c. butter
1/2 c. olive oil
1 1/2 tbsp. lemon juice
1/2 c. chopped shallots or green onions
1 tbsp. minced garlic
1 tsp. salt
Pinch of pepper
2 lbs. large shrimp
1/2 c. minced parsley

Melt butter, add oil, then stir in other ingredients, except shrimp and parsley. Stir to combine well and heat through. Remove from heat. Add shrimp and turn to coat shrimp all over. Put in broiling pan, in a single layer. Pour sauce over (can refrigerate now all day or cook immediately).

Cook uncovered and broil 3 to 4 inches from heat for 5 minutes. Turn shrimp over and broil 5 to 10 minutes more. Transfer to serving dish and sprinkle with parsley. Serve over rice. Makes 5 to 6 servings.
