TWICE BAKED POTATOES 
4 lg. potatoes
1/3 to 1/2 c. milk
2 tbsp. parmesan cheese
2/3 c. sour cream
1 tsp. salt

Scrub potatoes. Prick. Bake 16 to 18 minutes. Cover and allow to finish cooking. Cool slightly. Cut in half lengthwise. Scoop out potato and mix with remaining ingredients. Mash until smooth and well blended. Spoon mixture into potato halves. If desired, top with grated cheese or bacon bits. Microwave on High 4 minutes. Serves 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
