CURRY CHICKEN 
2 lbs. chicken drumsticks
2 oz. oil
6 sm. pieces fresh minced garlic
Sm. piece of fresh minced ginger
1 med. onion, minced
1 tbsp. curry powder
1 tsp. cumin powder
1 (16 oz.) can tomatoes
Salt and pepper to taste
Cayenne pepper to taste

Remove skin from chicken drumsticks. Heat oil in frying pan, fry the garlic until brown, then add ginger, onion, spices, canned tomatoes and a small amount of water. Simmer sauce until thickened slightly, then add chicken and simmer until chicken is tender. Serves 8.
