VEGETARIAN DELIGHT 
Cook 1/3 cup brown rice in 1 cup water with a vegetable bouillon cube (45 minutes). During last 15 minutes, heat in skillet:

2 tbsp. olive oil
1/8 tsp. oregano
1/8 tsp. basil
1/2 tbsp. tamari

Add and cook 5 minutes covered (stir occasionally).

2 med. onion, diced
1 lg. clove garlic, diced

Add and cook 5 minutes covered.

8 mushrooms, sliced
1/2 lg. green pepper

Add and cook 5 minutes covered:

1 med. zucchini
2 Italian tomatoes (optional)

Add 1 large garlic clove crushed to rice and stir. Add veggies to rice with 4 tablespoons plain garlic. Serve with grated Locatelli cheese. Enjoy.
