WILD RICE SALAD | |
1 c. uncooked wild rice cooked in 4 c. water, 1 tsp. salt for 45 to 60 minutes 1/2 lb. pea pods, cleaned & sliced 1 (11 oz.) can mandarin oranges 4 green onions, diced 1 c. chicken or turkey, chopped 1 c. cashews DRESSING: 2 tbsp. Dijon mustard 3/4 c. oil 1/4 c. wine vinegar 1/2 tsp. salt 1/4 tsp. pepper Drain rice well; chill. Add pea pods, oranges, onions and chicken. Mix dressing ingredients and toss into salad. Mix cashews into salad just before serving. |
