BROCCOLI SUPREME 
2 (10 oz.) pkgs. chopped broccoli
3 c. creamed cottage cheese
3 eggs
6 tbsp. butter, softened, divided
1/3 c. flour
1/4 c. onion, finely minced
1 (8 oz.) can whole kernel corn, drained
1/2 lb. cheddar or swiss cheese, diced
1/2 tsp. salt
1/4 tsp. pepper
Dash of hot pepper sauce
2 slices soft bread
1/2 c. cooked bacon, crumbled

Cook broccoli according to directions and drain. Combine cottage cheese, eggs, 4 tablespoons butter and flour in blender or mixing bowl. Blend or mix until cottage cheese mixture is smooth and creamy. Fold in broccoli, onion, cheese, salt, pepper, and hot pepper sauce. Pour cottage cheese mixture into a greased 2 1/2 quart casserole. Make soft bread crumbs by tearing one bread slice and placing in blender. Blend until soft crumbs have formed. Repeat with other slice. Melt remaining 2 tablespoons butter in skillet. Add crumbs and saute until brown. Sprinkle crumbs and bacon over broccoli mixture. Bake at 350 degrees for 1 hour or until mixture sets. Serves 8 to 12.
