TEXAS CAVIAR 
This is seriously a VERY yummy, filling appetizer and you get all your servings of veggies! Super healthy minus the oil, and super easy! No cooking necessary!

1 large white onion, diced
1 large tomato, diced
1 large green bell pepper, diced
1 peeled cucumber, diced
2 (15 oz. ea.) cans black beans, drained
2 (15 oz. ea.) cans Mexican style corn ("mexicorn"), drained
1/2 cup vegetable oil
1/2 cup red wine vinegar
salt and pepper, to taste
1 bag tortilla chips (I use Tostitos "scoops")

You will need a large mixing bowl to put all of your Texas Caviar in.

First, dice all of the fresh vegetables including your onion, tomato, bell pepper, peeled cucumber (make sure they are finely diced), and then put them all in the mixing bowl.

Next open the cans of black beans and corn. Drain them and put them in the large mixing bowl as well.

Then, measure out the oil and vinegar (more or less to taste), and pour this in the large mixing bowl as well.

Once all ingredients are in the large mixing bowl, mix it all together, season to taste and refrigerate for at least 30 minutes!

Finally, enjoy with your tortilla chip scoops! :)
