ZUCCHINI WITH PARMESAN CHEESE 
1 c. chopped onion
4 tbsp. olive oil
1 tsp. dried basil
4 med. zucchini, cut into 1/2 inch slices
2/3 c. grated Parmesan cheese
1/4 tsp. pepper

Combine onion, oil, and basil in a 1 1/2 quart glass casserole dish. Microwave, uncovered, on high for 5 minutes, stirring twice.

Add zucchini, cover and microwave on high for 7-9 minutes, or until zucchini is tender, stirring twice.

Stir in cheese and pepper. Cover and let stand about 3 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
