ZUCCHINI WITH CHEESE 
1 1/2 lb. zucchini
1/4 c. all-purpose flour
1 1/2 tsp. salt
1 1/2 tsp. dried oregano leaves
1/4 tsp. pepper
1/4 c. olive oil
2 med. tomatoes, sliced
1 c. dairy sour cream
1/2 c. grated Parmesan cheese

Preheat oven to 350 degrees. Lightly grease 8 x 8 x 2 inch baking dish.

Scrub zucchini. Cut crosswise into 1/4 inch slices. In medium bowl combine flour with 1/2 teaspoon salt, 1/2 teaspoon oregano and 1/8 teaspoon pepper. Toss zucchini slices in seasoned flour; coat well.

Slowly heat oil in large skillet. Saute zucchini until golden brown. Drain. Cover bottom of baking dish with zucchini. Top with tomato slices. Combine sour cream, rest of salt, oregano and pepper; spread evenly over tomato slices. Sprinkle with grated cheese. Bake 30 to 35 minutes.
