EGGPLANT CHEESE CASSEROLE 
2 c. diced raw eggplant
2 tbsp. onion flakes
2 oz. grated cheese
1 sm. jar chopped pimento
1 slice toast, crumbled
1/2 c. chopped mushrooms
1/2 c. evaporated milk

Mix together and bake in oven at 350 degrees for 30-45 minutes.
