APPLE PIE FILLING 
1 peck apples
6 c. sugar
7 c. water
1 stick butter
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1 c. cornstarch

Peel, quarter, and slice apples thin. Heat all ingredients (except apples) until butter is melted. Do not let this get hot; heat just until butter is melted.

Pack apples in jars; pour the mixture evenly over the apples. Seal and boil in hot water bath for 20 minutes. When needed, pour in pie shell and bake. One quart makes 2 shallow pies. Recipe yields 7 quarts.
