BAKED STUFFED SHRIMP 
1 stick butter
2 tbsp. lemon juice
1 tsp. minced parsley
30 Ritz crackers, crumbled
20 jumbo shrimp, cleaned, butterflied

Combine melted butter and lemon juice. Combine parsley and cracker crumbs until you have a moist consistency. You won't need all lemon butter.

Place stuffing on shrimp; pour remainder of lemon butter over shrimp in shallow baking dish. Bake at 375 degrees for 20 minutes. Serves 4.
