BANANA OATMEAL MUFFINS | |
1/4 cup (1/2 stick) butter, softened 3/4 cup brown sugar 1 beaten egg 1 cup buttermilk 1 cup rolled oats 1 cup all-purpose flour 1 tbsp. baking powder 1/2 tsp. salt 1/2 tsp. allspice 2 medium bananas, chopped or mashed Preheat oven to 400°F. Cream together butter and brown sugar. Mix in egg and buttermilk. Mix together oats, flour, baking powder, salt and allspice. Add to creamed mixture. Stir in bananas. Spoon into greased or paper lined muffin pan. Bake at 400°F for 20 to 25 minutes until golden brown. Makes 1 to 1 1/2 dozen. Submitted by: Lisa Otis |
