“CRISPY OVEN BAKED CHICKEN” IS IN:

CRISPY OVEN BAKED CHICKEN 
1 whole chicken, cut in pieces
2 egg whites or 1 whole egg
1 cup seasoned bread crumbs or Panko
1 cup all-purpose flour
1 tbsp. freshly chopped parsley
1/4 tsp. each garlic and onion powder
1/2 tsp. paprika (optional)
flour, salt and pepper

Wash chicken pieces and pat dry with a paper towel. Season chicken with salt and pepper and roll in flour to coat. Spray a 9x13-inch baking pan or larger with olive oil spray.

In a shallow dish, beat egg slightly. Add minced parsley to egg with a pinch of salt, pepper (and a sprinkle of garlic and onion powder).

In a shallow pan, combine 1 cup crumbs/Panko with 1 cup flour. Season the flour with salt and pepper, onion and garlic powder.

Roll the chicken in the egg, then in the seasoned flour/crumb mixture, turning well to coat.

Spray chicken well all over with the olive oil spray to moisten crumbs.

Bake, in a preheated 350°F oven, for about 1 hour or until chicken is tender, golden, and cooked through.

I have been making a similar recipe but without the flour. After reading this recipe and the reviews, I will add the flour as printed and wait at the dinner table for the chicken to disappear.

My mom made the best baked chicken when we were growing up and this is the recipe most like hers. I used Emeril's seasoning (paprika, garlic, salt and pepper and parsley) and cooked it an hour and 10 minutes for extra crispy and it was just like mom used to make! Thank you :)

I made this recipe and what little chicken that was left I use to make chicken Parmesan. I did add paprika to the chicken and used only breast meat. I will make this again!

I add dry ranch dressing to the bread crumbs, and omit the other seasonings, when it is finished baking I lightly salt and pepper it...it not on tastes better the aroma is wonderful!

I tweaked the recipe just a bit by adding more seasonings than called for in the recipe, and used homemade breadcrumbs I had in the freezer from my homemade breads.I used chicken thighs I purchased on sale a while back that had been waiting in the deep freeze for a perfect recipe. I used canola oil since that was all I had to spray the pan and the chicken with and this turned out AMAZING! The entire family, 10 year old picky eater included, LOVED the chicken!
