TABOULI 
2 c. boiling water
2 c. bulgur wheat
3 med. tomatoes, diced
1 bunch scallions, chopped (greens too)
1/2 bunch fresh parsley, chopped
1 heaping tbsp. dried spearmint
1/2 c. olive oil
1/2 c. lemon juice
1/4 c. vegetable oil
1/2 tbsp. salt
1/4 tbsp. pepper
Fresh mint garnish

In a large pan (4-6 quarts) with a lid, bring water to a boil. Remove from heat. Add bulgur; stir and cover and let stand 2-3 hours or until all the water has been absorbed. Cool bulgur; place in a large bowl and add tomatoes, scallions, parsley, and mint.

In a jar, combine oils, lemon juice, salt, and pepper; shake vigorously. Alternatively may mix in a small blender jar. Pour over bulgur and mix well. Refrigerate. Before serving, mix again and garnish with fresh mint. Really great for those dog days of summer.
