TABOULI 
1 c. uncooked bulgur
2 c. boiling water
2 tomatoes, finely diced
1 bunch green onions with tops, sliced
3 tbsp. chopped fresh mint or 2 tsp. dried mint leaves
1 c. finely chopped parsley
3 tbsp. good olive oil
1/2 c. fresh lemon juice
Pepper to taste

Three to four hours before serving, place uncooked bulgur in a large bowl. Pour boiling water over the bulgur and let soak for 1 hour. Stir occasionally. Drain well in fine strainer. Return to bowl and stir in other ingredients. Chill for about 2 hours. Serve on whole romaine lettuce leaves. Makes 6 cups.
