MEXICAN FRUIT CAKE | |
2 eggs 2 tsp. baking soda 2 c. sugar, brown or white 2 c. flour 1 (20 oz.) can crushed pineapple and juice 1 c. walnuts, chopped (optional) (Can use 1 cup whole wheat and 1 cup unbleached white). Mix all ingredients and bake at 350 degrees for 45 minutes in 9 x 13 inch pan that has been oiled and floured. While cake bakes make frosting. FROSTING: 8 oz. cream cheese 1/2 c. butter 1 tsp. vanilla 2 c. powdered sugar Mix and cover. As soon as cake is done frost it while it is still hot. Then cool. Recipe out of a McKay's People Pleaser in San Jose, California. My sister gave me this one. It's very easy to make and very good. This cake is good warm or cold. This is my favorite cake. |
