MEXICAN CASSEROLE | |
1/4 c. chopped onion 2 lbs. ground beef 2 (14 oz.) cans stewed tomatoes 1 pkg. taco seasoning 2 c. shredded Cheddar cheese 1 (2 1/2 oz.) can chopped black olives 1 (12 oz.) pkg. cheese flavored tortilla chips 1/2 lb. shredded Mozzarella cheese 1 c. sour cream and chives 1 (4 oz.) can diced green chilies (optional) Brown ground beef with onion over medium heat, stirring frequently. Drain fat. Blend in tomatoes, taco seasoning, green chilies and black olives. Simmer about 1/2h our or until thick. Lay 2/3 of chips over bottom of lightly greased 9 x 13 inch baking pan. Add all of meat mixture. Top with Mozzarella cheese. Top with sour cream. Top with rest of chips, slightly crushed. Bake at 350 degrees for 30 minutes. Sprinkle Cheddar cheese on top and continue baking until cheese melts. Let stand 5 minutes before serving. |
