ZUCCHINI PATTIES 
Peel and seed a couple large zucchini. Grate and let drain a few hours in a colander. Squeeze to make sure all excess liquid is removed. Add mint (preferably fresh), black pepper, basil, oregano, finely chopped onion and finely chopped garlic.

Mix in eggs, milk and crushed saltines to bind together. Form into pattie (this mixture should be fairly moist). Fry in oil until golden brown; turn to cook both sides. Drain and serve with sour cream and/or applesauce. These freeze well (and use up lots of zucchini!!).
