TUNA AND ZUCCHINI PATTIES | |
1/2 c. chopped onion 1 tbsp. butter 1 (6 1/2 oz.) can tuna, drained and flaked 1 c. shredded zucchini 2 slightly beaten eggs 3/4 c. seasoned bread crumbs 1/3 c. parsley 1/8 tsp. pepper 2 tbsp. cooking oil Cook onion in butter until tender but not brown. Remove from heat. Add tuna, zucchini, eggs, 1/2 cup bread crumbs, parsley and pepper. Stir until combined. Shape into six 1/2 inch thick patties; coat with remaining crumbs. Heat oil in pan. Cook patties over medium heat about 3 minutes per side or until golden brown. Makes 3 servings. |
