TUNA STUFFED ZUCCHINI 
3 lg. or 6 med. zucchini
1 (7 1/2 oz.) can tuna
3 tbsp. Parmesan cheese
3 tbsp. chopped parsley
Salt and pepper to taste
1 1/2 c. tomato sauce or spaghetti sauce
1/2 c. buttered bread crumbs, for top
Shredded Mozzarella, for top

Cut zucchini lengthwise, remove seeds. Parboil in a large pan of salted water. Test for doneness with a skewer. Combine tuna, egg, salt, pepper, Parmesan, parsley. Stuff zucchini. Place in greased oven dish, top with tomato sauce, bread crumbs and Mozzarella. Bake at 300 degrees for about 20 minutes. To serve cut in smaller pieces.
