DILLY TUNA-ZUCCHINI PATTIES | |
1/2 of sm. zucchini (about 3 oz.) 2 eggs 1 tbsp. dried minced onion 1/3 c. seasoned fine dry bread crumbs 1 tbsp. dried parsley flakes 1/2 tsp. dried dill 1/8 tsp. pepper 1 (6 1/2 oz.) can tuna or salmon 1 tomato, sliced (optional) Preheat broiler. Shred zucchini (1/2 cup). In medium bowl, beat eggs. Add remaining ingredients, except tuna. Drain and flake tuna, then stir well into other ingredients. Shape into 3 patties. Broil 4" from heat for 3 minutes. Turn carefully and broil 3 more minutes or until golden brown. Top with tomato slice if desired. Makes 3 servings. 187 calories, 5 g fat, 157 mg sodium. |
