ZUCCHINI PATTIES | |
2/3 c. Bisquick baking mix 1/4 c. butter, melted 1/8 tsp. garlic salt 2 eggs 3 c. shredded zucchini, drained 1/4 c. thinly sliced green onions (or reg. onion) Beat baking mix, butter, garlic salt and eggs with hand beater until well blended; stir in zucchini and green onion. Grease heated griddle, if necessary. (To test griddle, sprinkle with few drops of water, if bubbles skitter around, heat is just right.) Or heat electric griddle to 400 degrees. For each patty, spoon 1/4 cup mixture onto hot griddle; spread slightly. Cook until patties are dry around edges. Turn; cook other sides until golden brown. Top each patty with sour cream and thinly sliced green onion or applesauce. Makes 12 patties. |
