ZUCCHINI PATTIES 
3 c. grated zucchini
1 sm. onion, chopped fine
1 lg. beaten egg
1/2 c. bread crumbs
1/2 tsp. minced garlic
1/2 tsp. cumin
1/2 tsp. salt
1/4 tsp. pepper
Vegetable oil for frying
3/4 c. Monterey Jack cheese

Combine all ingredients except oil and cheese. Blend well. Heat oil in large skillet. When oil is hot, drop 1/4 cup mixture at a time. Cook until underside is brown, then turn. Sprinkle with cheese and place on hot platter. Serve at once.
