ITALIAN ZUCCHINI PATTIES 
5 c. zucchini, grated
1 tbsp. oregano
1 tsp. basil
1 c. flour
1 tbsp. salt
1/2 tsp. Parmesan cheese
2 eggs

Add salt to zucchini. Let stand 1 hour. Drain well. Add rest of ingredients, except cheese. Drop by tablespoon into hot oil. Cook until golden brown. Sprinkle with cheese while still hot.
