WILD RICE TURKEY SALAD 
2/3 c. wild rice
2 c. water
1 tsp. salt
2 1/2 c. cooked turkey or chicken
2/3 c. mayonnaise
1 tbsp. lemon juice
1/4-1/3 c. milk
1/2 sm. grated onion
2 c. seedless grapes, halved
1 c. cashews
1 (8 oz.) can water chestnuts, drained & rinsed
Salt & pepper to taste
Lemon slice for garnish

Wash rice thoroughly in water in saucepan. Combine rice, water and salt. Bring to boil. Cover and simmer about 45 minutes until grains are tender. Blend all ingredients except grapes and cashews; add them just before serving. Chill.
