BBQ ROAST | |
1 c. water 1 heaping tsp. dry mustard 1 c. soy sauce 2 heaping tbsp. brown sugar 1/4 c. bourbon or wine 1 clove garlic, mashed Use a 7 bone, cross rib, English cut, not round bone roast. Sprinkle the roast with tenderizer a few minutes, no more, before placing in marinade. Combine the above ingredients and marinate the roast 4 hours, turning a few times. Brush the roast with oil. Brown the meat close to the coals. Move them as far away from the coals as possible by raising the grill (approximately 5 inches). Cover with a foil tent. Turn the meat often. Total time is approximately 1 hour. |
