BAKED BEANS | |
2 lbs. sm. beans 1 c. brown sugar 1 tbsp. white sugar 1 tsp. dry mustard 1 tsp. pepper 1 tsp. salt 1/2 tsp. baking soda Salt pork Soak beans overnight. Pour off water. Rinse in cold water. Cover the beans with hot water. Add 1/2 teaspoon baking soda. Boil 10 to 15 minutes until skin breaks. Drain beans. Recover beans with hot water. Add sliced salt pork and boil until beans are soft. Remove the salt pork. Mix brown sugar, salt, pepper and mustard into beans. Pour into baking dish or pan. Arrange salt pork on top. Sprinkle 1 tablespoon of white sugar on top. Bake at 325 degrees until browned but not too dry, about 1 hour and 15 minutes. |
