BAKED BEANS 
2 lbs. beans (navy or other)
1 tsp. mustard
1 c. granulated sugar
Salt pork
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. ginger
1/2 c. brown sugar, maple syrup or molasses

Soak overnight and drain off water; add new water. Parboil in soda (1 teaspoon) water until skins wrinkle on exposure to air. Skim froth off top. Drain; add seasonings. Add a few pieces of salt pork. Hot water to cover beans. (Recheck addition of water.) Bake 6 or 7 hours at 300 degrees for first part and turn back to 250 degrees for remainder of time.
