BRUNCH CASSEROLE 
12 slices white bread
Butter, softened
1 lb. pork sausage
1/2 lb. grated Swiss cheese
4 eggs
3 c. milk
1 tsp. salt
Tabasco to taste

Trim crusts from bread and butter lightly on one side. Crumble sausage and cook until lightly browned; drain. Lay out 6 slices of bread in a 3 quart casserole dish; buttered side up. Sprinkle half the sausage and half the cheese over the bread.

Repeat with bread, sausage and cheese. Beat together eggs and milk until well blended; beat in salt and Tabasco. Pour over sausage and cheese. Press down on bread until milk comes through. Cover and refrigerate overnight. Bake uncovered at 350 degrees for 1 hour until puffed and brown. Serves 6.
