MACARONI-SAUSAGE CASSEROLE 
1/2 lb. seashell macaroni (8 oz.)
Pork sausage meat (1 lb.), roll and mild
1 med. onion
2 to 3 stalks celery
1 (15 or 16 oz.) can tomatoes
Salt and pepper to taste
1/2 lb. (8 oz.) mild Cheddar cheese

(Onion and celery may be omitted if desired). Cook the macaroni according to package directions and drain. Brown the sausage in a skillet while you chop the onions and celery. After about 5 minutes cooking time, add them to the sausage. When sausage is done, tilt the pan and remove the excess grease with a spoon.

Add the chopped tomatoes (with juice from the can), salt and pepper, and simmer for 5 to 10 minutes. Combine the macaroni and sausage mixture in a shallow casserole dish. Sprinkle grated cheese on top and bake in 400 degree oven for 15 to 20 minutes, or until cheese is melted. Serve with applesauce and cole slaw. Delicious!
