SESAME CHICKEN KABOBS | |
2 lbs. chicken breast, boned, skinned cut in 1" cubes 1/4 c. soy sauce 1/4 c. Russian low cal dressing 1 tbsp. sesame seeds 2 tbsp. lemon juice 1/4 tsp. garlic powder 1/4 tsp. ground ginger 1 lg. green pepper, cut into 1" cubes 2 med. onions, cut into eighths 3 sm. zucchini, cut into 3/4" pieces 1 pt. cherry tomatoes Vegetable cooking spray Place chicken in shallow container and set aside. Place next 6 ingredients in jar; cover tightly and shake vigorously. Pour over chicken; cover and marinate 4 to 6 hours in refrigerator. Remove chicken from marinade, reserve marinade. Alternate chicken and vegetables on skewers. Coat grill with vegetable spray. Grill kabobs about 6" from medium hot coals for 15 to 20 minutes. Turn and baste frequently with marinade. Yield: 6 servings. |
