SPINACH QUICHE 
1 1/2 c. grated cheddar cheese
3/4 c. flour
1/2 tsp. salt
1/4 tsp. dry mustard
1/2 c. melted butter
1 pkg. frozen chopped spinach, cooked and drained dry
1/2 c. milk
1/2 c. half and half
1/4 c. chopped onion
1 tsp. salt
1/2 tsp. nutmeg
Dash pepper
3 eggs, room temperature

Mix cheese, flour, salt, dry mustard, and butter. Mix together and knead into dough. Press into pie plate.

Cook milk mixture (do not boil). Add eggs slightly beaten; add spinach. Pour on top of dough mixture. Bake at 400 degrees 15 minutes. Reduce heat to 325 degrees. Bake another 20 minutes.

Serve hot or cold. Serve right side up or flip over so crust will be on top. Serves 4-8.
