BROCCOLI RICE CASSEROLE 
1 c. cooked minute rice (takes 1/2 cup of uncooked)
1 sm. chopped onion
1/2 c. chopped celery
1/2 stick butter (do not double for double recipe)
1 pkg. frozen chopped broccoli
1 can cream of mushroom soup
1/2 c. milk
3/4 to 1 c. grated cheddar cheese

Saute cooked rice, onion and celery in butter. Cook and cool broccoli and drain well. Add broccoli to rice mixture. Add soup, milk and cheese. Mix well. Pour into greased casserole and sprinkle with more cheese (if desired). Top with cracker crumbs and bake at 350 degrees for about 40 to 45 minutes.
