NORWEGIAN SERINA COOKIES 
1 c. softened butter
1 c. sifted confectioners' sugar
1 egg, slightly beaten
2 1/2 c. sifted all-purpose flour
1/2 tsp. baking soda
1/2 tsp. cream of tartar
Dash of salt
1/2 tsp. vanilla
1 egg white, slightly beaten
1/2 c. finely chopped walnuts
1/4 c. granulated sugar

Cream butter until soft. Add confectioners' sugar and blend well. Stir in beaten egg. Sift together flour, baking soda, cream of tartar and salt. Gradually add to butter mixture mixing well. Stir in vanilla. Cover and chill dough 1 hour or more.

Heat oven to 350 degrees. Shape cookie dough into small balls about 3/4 inch in diameter and place about 2 inches apart on ungreased cookie sheet. Press each cookie lightly with the tines of a fork.

Brush each cookie with beaten egg white and sprinkle lightly with nuts and sugar combined. Bake about 10 minutes. Cookies will not brown, but topping will brown slightly. Makes about 6 dozen small cookies.
