NORWEGIAN CHRISTMAS COOKIES 
1 1/2 c. butter
1 1/4 c. sugar
1 tbsp. grated lemon rind
2 eggs, slightly beaten
4 c. sifted flour

Place butter in bowl and allow to soften. Add sugar, lemon rind and eggs. Mix thoroughly. Stir in flour. Chill dough. Roll out chilled dough 1/4 inch thick and cut with Christmas cutters. Bake 375 degrees 10-12 minutes.
