CARROT BARS 
2 eggs
1 c. sugar and 3/4 c. oil
1 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 jar strained baby carrots

Beat eggs. Gradually add sugar and oil. Beat well. Add dry ingredients, beat well. Add carrots. Pour into 9 x 13 inch pan and bake for 30 minutes at 325 degrees.

FROSTING:

1 (3 oz.) pkg. cream cheese, softened
1 tbsp. butter
1 tsp. vanilla
2 c. sifted XXX sugar

In a small bowl, combine cheese, butter, vanilla, and beat well. Gradually add XXX sugar, beat until smooth.
