AFRICAN SPINACH STEW 
1 1/2 lbs. steak
1 1/2 lbs. fresh spinach, chopped
1 med. onion, sliced
1 med. red bell pepper, sliced
1 c. oil
1 1/2 tbsp. tomato paste
1 tsp. salt
1 tsp. cayenne pepper
1 med. smoked herring, deboned (optional)

Cut steak into bite size pieces and season with salt and pepper. In medium heavy saucepan, brown meat in oil, turning occasionally, until meat is fork tender. Remove meat and add remaining ingredients, except for spinach. Cook for 15 minutes, then add spinach. Cover and simmer for 20 minutes. Add meat and smoked herring, if desired, and cook for 10 minutes more. Serve over rice.
