ZUCCHINI COOKIES 
3/4 c. butter
3/4 c. brown sugar
1 egg
1 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. grated zucchini
1 1/2 c. whole wheat flour
1 1/2 c. rolled oats
1 c. raisins

Cream together first 7 ingredients until creamy. Stir in rolled oats, zucchini, whole wheat flour, and raisins until combined. Drop by tablespoonfuls onto a lightly greased cookie sheet. Bake at 350 degrees for 10 minutes.
