BANANA BREAD 
1/2 c. shortening (I use 1/2 butter and 1/2 butter)
1 c. sugar (granulated)
2 eggs
1 c. mashed ripe banana
1 tbsp. lemon juice
2 c. sifted flour
3 tsp. baking powder
1/2 tsp. salt
1 c. chopped nuts (I use pecans or walnuts)
1 can pitted red sour cherries, drain well

Cream shortening and sugar together. Beat eggs until light and fluffy. Add to shortening mixture. Mash bananas with fork and add lemon juice. Add to the above mixture. Sift flour, baking powder, and salt together and add to above. Add nuts and well drained cherries. Put in greased loaf pan. Bake at 350 degrees for 1 to 1 1/4 hours.
