LEMON MERINGUE PIE | |
1 1/2 c. sugar 1/3 c. cornstarch 1 1/2 c. boiling water 3 egg yolks 1/8 tsp. salt 1 tbsp. butter 1/2 c. lemon juice MERINGUE: 3 egg whites 1/4 tsp. cream of tartar 1/2 tsp. vanilla or lemon juice 6 tbsp. sugar Put into double boiler top the sugar and cornstarch and gradually add boiling water. Stir constantly over direct heat until thick. Place over boiling water in double boiler and cook 7 minutes longer (stir frequently). Beat together the egg yolks and salt. Stir a little of the sugar cornstarch mixture into egg yolks and then stir this into double boiler top. Cook 5 minutes, stirring constantly. Remove from heat and add butter and lemon juice. Blend, cook and pour into baked pie shell. MERINGUE: Beat the egg whites until foamy and add cream of tartar. Continue beating on high speed until stiff, approximately 1 minute. Gradually beat in sugar and then add the vanilla or lemon juice. Continue beating for 1 1/2 minutes. Then heap onto pie and bake at 325 degrees for 20 minutes. |
