FLOYD'S HOT TAMALES 
3 lbs. ground meat
2 tsp. garlic powder
2 tsp. red pepper
1/2 tsp. black pepper
6 tsp. salt
1/2 c. yellow cornmeal
1 (2 oz.) bottle chili powder
1 can tomato sauce
6 med. onions, cut very sm. or put in blender with tomato sauce
1/2 c. water

Put all ingredients in roast pan and mix well by hand. Take about 1 tablespoon at a time, roll in yellow cornmeal, wrap in papers. Wet paper so they won't be so stiff. Put tamales in large pot. Pour boiling water to completely cover all hot tamales and 1 can tomato sauce and 1 ounce chili powder. Simmer 2 hours with cover on. Put pan across two burners on top of stove. Makes 85 to 100 tamales.
