PINTO BEAN PIE 
1 c. cooked pinto beans (canned beans will do)
1 c. chopped pecans
1 can coconut
4 whole eggs
3 c. sugar
1 1/2 sticks melted butter
1 tsp. vanilla
3 unbaked pie shells

Mash beans well (use juice). Beat eggs. Add all other ingredients. Mix well. Pour into pie shells. Bake 45 minutes to 1 hour at 300 degrees. "These pies freeze well."
